- 500 g strawberries
- 3g fresh mint
- 12 g lime
- 100 cl olive oil
- 20 g ground almonds
- 30 g buckwheat flour (Farine de Sarrasin)
- 3 sprigs lemon thyme
- 10 cl orange juice
- 100 grams olive oil
- 30 g cornstarch
- 40 g melted butter
- 2 egg whites
- Baume de Bouteville (e.g., Old Reserve No. 6)
Preparation
Wash and hull the strawberries, then blend them with lime juice and a few lemon thyme leaves. Add a dash of Baume de Bouteville to taste and refrigerate.
For the almond tuiles, mix the ground almonds, buckwheat flour, olive oil, cornstarch, melted butter, egg whites, and orange juice in a bowl.
In a hot non-stick skillet, use a spoon to make 1 circle of the mixture. Once the tuile is formed and cooked, place it on absorbent paper. Repeat 3 more times.
Serve the cold soup, sprinkle with a few chopped fresh mint leaves and
some grated lime zest. Add the almond tuile and serve immediately.
