Empty snail shells to fill with snail meat and butter sauce.

5 douzaines - 5 dozen

Recipe for a dozen snails:

Mix 70g butter, 6g parsley, 8g garlic and 6g finely chopped shallots, salt and pepper.

Preparation: Clean the snail meat with fresh water, drain it, and let it drip dry. Place the meat in the shell and garnish with the butter sauce according to the recipe above. Place it in the oven and serve as soon as the butter starts to boil/sizzle.
