Vineyard averaged 45 years old.


VINIFICATION - AGING
Blend: Grenache 80%, Syrah 15%, Mourvèdre 5%.
Exclusively hand-harvested.
Destemming 80%, manual punching down.
Long vatting for the Syrah 30 days, for the Grenache and Mourvèdre 22 days.
Strict temperature control.
Only tank aging for this reserve.
Bottled after 4 years of aging.
Only unfined, unfiltered wine.


TASTING
The Grenache Syrah Mourvèdre blend produces more complex wines.
Not very fruity in their youth, but with great complexity making them suitable for aging.
Ideal with meat in sauce, Provençal stew or with game.
Very enjoyable with an old province.
