VINIFICATION - MATURATION
Manual harvest.
80% destemming.
Fermentation lasts an average of 22 days for Grenache and 30 days for Syrah.
Manual punching down and daily pumping over.
Strict temperature control.
Depending on the vintage and tastings, adaptation of vinifications.
Ageing in vats.
Bottling after 18 months, without filtration.
TASTING
The lesser-known village of the Côtes du Rhône is an ideal master key.
Even for a good evening meal, it will be less intoxicating in terms of fruit than with a vintage.
Also pairs well with white meats, stuffed vegetables and gratins
