Description
Nothing is lost, everything is transformed. From the end of autumn, the two local aubergines "Bou Shawki" and "El Homsi" experience a second life. Pickled and then stuffed according to a recipe passed down from generation to generation, they are carefully preserved in jars in preparation for the long winter months. The making of 'makdous', traditionally carried out by rural women, plays an important role in their empowerment.
Our aubergines are grown in the Lebanese region of Qaa, on fertile soil that benefits from hot and dry summers, and are considered the best in the country. They benefit from an ideal climate, which is conducive to the full development of their flavours.
The aubergines are stuffed with walnuts, bell pepper and garlic.
Enjoy them, for example, with a slice of bread and tomato slices, or place them on a green salad for a spicy touch. Excellent guests during mezze, aperitifs or brunch to change your taste buds! It replaces traditional Italian antipasti for a gourmet aperitif and can also complement your sandwiches, barbecues and vegetarian dishes.
