Foie gras block is a product made from foie gras that has been processed to obtain a smooth and homogeneous texture. Unlike whole foie gras, which consists of one or more whole foie gras lobes, foie gras block is an emulsion consisting of pieces of foie gras, often emulsified with a little water, to obtain a smoother, uniform creamy consistency. There are two categories, with or without pieces of whole foie gras integrated to provide a more varied texture.
