Unlike whole foie gras, which consists of one or more whole foie gras lobes, foie gras block is an emulsion consisting of pieces of foie gras, often emulsified with a little water, to obtain a smoother, more uniformly creamy consistency. There are two categories, with or without pieces of whole foie gras integrated to provide a more varied texture
