Grapes: Grenache 80% Syrah 10% Mourvèdre 10%

VINIFICATION – MATURATION
Traditional in red. Destemming 100%
Long fermentations. Strict temperature control.
Co-fermentation Grenache Syrah and then Grenache Mourvèdre.
Only indigenous yeasts.
Punching down according to the vintage and tastings.
Malolactic completed.
Aged in concrete vats and ceramic vats.
No wood ageing.
